Cinnamon Pie

One of our favorite shows on television is Psych. Everyone, even my eight year old son, can appreciate the humor of a fake psychic working with the police department to solve more murders than ever thought possible in a small town. Somehow, this show always manages to stay in the top five slots in the "Recently Watched" category of Netflix for us. A couple weeks ago, we were watching an episode called "Dual Spires", an episode were Shawn and Gus go to a small town that is hosting a cinnamon festival. While there, they enjoy many slices of cinnamon pie. Which got me thinking....


...how awesome would a slice of cinnamon pie be?!? My first attempt at making this pie was a complete and utter failure. I decided to try a custard-style pie, similar in texture to a pumpkin pie. Instead, it came out more like thin layers of scrambled egg with a lot of liquid between them. As soon as I sliced the pie, I picked it up and tossed the whole thing into the trash. So, back to the drawing board.

My second attempt was much more successful. Rather than a custard-style filling, I started with a basic pecan pie filling, but without the pecans. A few eggs, some corn syrup, brown sugar, a lot of cinnamon, and a splash of whiskey made for a gooey filling that was sticky sweet and loaded with cinnamon flavor. Fifty minutes in the oven made the whole house smell good and a great dessert to enjoy.


Cinnamon Pie

1 recipe Basic Pie Crust
3 eggs
1 cup light corn syrup
1/2 cup brown sugar
1/4 cup melted butter
1 tsp vanilla extract
2 Tbsp whiskey
1 Tbsp cinnamon

Preheat oven to 350 degrees F. Prep pie crust for a single crust pie (use other half of recipe for a second single crust pie). In a large mixing bowl, mix together all ingredients except pie crust dough.






Pour filling into prepared pie crust. Bake in 350 degree F oven for 50-55 minutes, or until filling is set and top is browned. Cool completely before slicing.
